Chicken White Bean Chili Verde

A few mornings ago, I woke up and the ocean fog had rolled in overnight and cast a thick gray layer overhead. With a slight chill in the air, I knew that a big pot of this chicken white bean chili verde was about to be simmering on my stove.

I normally calculate how mild or severe the winter has been by how many times I have put on my heavy coat. After my very scientific calculation, I concluded that I had not put it on once this year, not once!

So, as you can imagine, I was all set for a cold day where I could snuggle up with a blanket and some warm soup. By noon, the fog had burned off and it was sunny and warm. This setback, however, did not interrupt my plans. I still made this chili!

Rustic Current and Cherry Scones

My favorite part of the day is early in the morning when the sun is just starting to rise. The house is quiet, the streets are empty, and the phone is silent. The other day, I woke up early. For that small portion of time between darkness and sunlight, it was just me in my kitchen. I brewed a cup of coffee, watched the sun come up, and started to gather the ingredients for these rustic current and cherry scones.

I have been eyeing this recipe for a few weeks now. A while ago, I started to look for a good scone recipe and I kept coming back to this one. I tried a few other recipes, but I couldn’t get this one out of my head. Finally, I stopped by the grocery store and picked up the only ingredient I didn’t have on hand, buttermilk. I had some currents and dried cherries left over from other recipes, so I decided to use them both.

Kale and Grapefruit Salad

I am obsessed with this super simple and fresh kale and grapefruit salad. For some reason, grapefruit has been particularly juicy, sweet, and delicious this season. I paired it with some winter kale and crunchy pumpkin seeds for a light salad.

For this recipe, it is perfectly acceptable to play with your food. Massaging the kale with extra virgin olive oil, salt, and lemon juice makes the leaves soft and tender. See the leaves before and after…kind of crazy what a difference a little massage can make!

The Perfect Roast Chicken

The perfect roast chicken is a recipe that all cooks should master. The key is crispy, golden brown skin on the outside and juicy, tender meat inside.
