Kale and Grapefruit Salad

I am obsessed with this super simple and fresh kale and grapefruit salad. For some reason, grapefruit has been particularly juicy, sweet, and delicious this season. I paired it with some winter kale and crunchy pumpkin seeds for a light salad.

For this recipe, it is perfectly acceptable to play with your food. Massaging the kale with extra virgin olive oil, salt, and lemon juice makes the leaves soft and tender. See the leaves before and after…kind of crazy what a difference a little massage can make!

The Perfect Roast Chicken

The perfect roast chicken is a recipe that all cooks should master. The key is crispy, golden brown skin on the outside and juicy, tender meat inside. In this recipe, I add lemons, garlic, and thyme to the cavity of the chicken. Melted butter is brushed on before roasting to ensure golden brown and crispy skin. I roast the chicken on a bed of aromatics like carrots, celery, and onion.

The epitome of comfort food, roast chicken is warm and homey on a cold night. It can also be transformed into an elegant dish that will impress guests at any dinner party.
Tip For Perfect Roast Chicken:
Remove the chicken from the refrigerator 30 minutes before roasting. This will ensure even cooking throughout the chicken during roasting. Also, make sure the chicken is patted dry with a clean paper towel before the butter is added. Too much extra moisture and the skin will not get crispy.

Crunchy Granola

Once you try homemade crunchy granola, you will never want to buy it again. I was spending $5.00 for a two cup bag of granola at a health food store. Completely fed up with this ridiculous price, I had to make best online casino my own. The end result: healthy, simple, quick, money-saving, and crunchy granola!
When making your own granola, you can control how much sugar is added. Also, you can change the ingredients (dried fruit, seeds, nuts, spices etc.) depending on your taste or mood.
I love this granola with a little bit of non-fat vanilla yogurt. I usually add a drizzle of honey to the yogurt first. It is also good with a splash of cold milk. Or take it on the go for healthy and easy snacking.
