After a fun vacation, this Creamy Green Smoothie was just the thing that I was craving.

It’s difficult to eat healthy when you are on vacation and constantly eating out. I just got back from a seven-day boat trip around the British Virgin Islands. The water was crystal blue and the snorkeling was amazing.

It was my first time to the Caribbean and my first time living on a boat for seven days. We went as part of a business school graduation trip, so there were about 300 of us there. It was more like a seven-day party around the BVI’s!

Despite being surrounded by pristine beaches and turquoise water, I feel like I ate an entire can of Pringles everyday—and plenty of rum punch. But it was vacation after all, so I didn’t really mind.

When I got back, my body was craving something healthy and green. And this creamy green smoothie hit the spot.

Creamy Green Smoothie

I always love to add bananas to smoothies because they add thickness. In this smoothie they help to balance out the spinach taste so it’s not too overpowering. Also, if you are using a fairly ripe banana, it should be more naturally sweet so you don’t need to add any additional sweetener.

The avocado is what makes this smoothie super creamy. Plus the healthy fats, naturally found in avocados, make this smoothie filling, creamy, and delicious.

Yield: 1 smoothie

Creamy Green Smoothie

Ingredients

  • 1 fresh or frozen banana
  • ¼ avocado, peeled
  • 1 cup spinach
  • 1 cup almond milk
  • 1 tablespoon lemon juice
  • ½ cup ice, optional

Instructions

  1. Place all ingredients into a blender and blend until smooth. If you are using a frozen banana, you may omit the ice, but if the banana is not frozen, I recommend adding in the ice. Pour into a glass and enjoy!
