This Kale Slaw with Creamy Greek Yogurt Dressing is summer in a bowl: light, refreshing, and full of color.
Summer temperatures are getting hot and heavy. And I’m ready to bring on the summer barbecues, picnics in the park, and al fresco dining. First on my menu is this healthy and creamy kale slaw.
This kale slaw recipe is my lightened up take on a traditional coleslaw. Crunchy kale, red cabbage, and carrots are drizzled with creamy Greek yogurt and lemon dressing. It is a healthy side dish bursting with flavor and color.
Take a little bit of extra time to slice the kale and cabbage thinly. It will help the dressing go on more evenly and make each bite a little better. Also, I bought pre-shredded carrots, which made for a quick assembly and cuts down on the prep time.
