How many times have you packed a granola bar in your purse for a quick snack on-the-go? I know I always carry one with me—for those hangry moments. And other snacks are fine, but is anyone else a germaphobe?

After touching the subway poles, I’m not about to reach in for a handful of nuts. Enter these easily packable and accessible chewy granola bars. The store-bought granola bars are pretty good, and I have my favorites. But, as with most things, homemade tastes much better. Plus, you know exactly what goes into each bar.

I’ve made homemade granola bars before—and they’ve often turned out flat and hard. I’m not so into eating cardboard, so I was set on developing a better recipe. In my past granola bars, I’ve only used oats in the recipe. In the words of Julia Roberts in Pretty Woman, “Big mistake!”

The secret to the most delicious chewy granola bars—crispy rice cereal. The crispy rice cereal makes the bars lighter than using only oats. When mixed with the honey and brown sugar, it takes on a chewy quality that I was missing with the all-oat bars.

Cooking Tip:

  • When measuring honey, spray the measuring cup with non-stick cooking spray before adding in the honey. The honey will not stick to the measuring cup and pour right out, which makes your measurement more accurate.

Chewy Granola Bar Recipe

Chewy Granola Bar Recipe


  • ¼ cup honey
  • ¼ cup unsalted butter
  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups quick-cooking oats
  • 1 ½ cups crispy rice cereal
  • ¼ teaspoon salt
  • ½ cup chopped roasted almonds, unsalted
  • ½ cup mini semi-sweet chocolate chips, divided


  1. Line an 8x8-inch pan with parchment paper with a 1-inch overhang on two sides making handles.
  2. In a small saucepan over medium heat, combine the honey, butter, sugar, and vanilla extract. Cook until the butter melts and the sugar dissolves, stirring occasionally.
  3. In a large bowl, combine the oats, rice cereal, salt, and almonds.
  4. When the honey mixture is ready, pour it over the oat mixture and stir to combine. Transfer the mixture to the prepared pan and press firmly with a rubber spatula to form an even layer. Sprinkle on ¼ cup mini chocolate chips and press firmly so they stick to the oats. Chill in the refrigerator for 2 hours.
  5. After the granola bars have chilled, gently lift them out of the pan using the parchment paper as handles and cut into 12 bars.
  6. In a microwave safe bowl, melt the remaining ¼ cup mini chocolate chips in the microwave, stir after 30 seconds, and return to microwave for 15 second intervals until melted. Transfer to a piping bag or use a spoon to drizzle the chocolate over the bars. Let the chocolate cool slightly to set.
  7. Store wrapped in plastic wrap in a large resealable plastic bag at room temperature.
