It’s Wednesday! Time for another cocktail recipe! I usually stay in the kitchen and pass the bartending duties off to someone else, but recently I have traded in my wooden spoon for a cocktail stirrer!
We have been having some amazing and warm weather here on the West Coast. To celebrate the summer-like temperatures, I made fresh strawberry and mint mojitos! They are so refreshing and cool, perfect for a hot summer evening outside!
Mojitos remind me of summer. I think they are the unofficial drink of summer! Plus, this time of year, the mint plants in my garden are overgrowing! I added some strawberries for bright color and a bit of fruity flavor. Delish! Serve in cute jelly jars for a rustic presentation!
Strawberry Mojitos
Ingredients:
- 10 mint leaves
- 2 large strawberries
- 1/4 cup (2 ounces) light rum, such as Barcardi
- 1/2 cup club soda
- juice of half a lime
- 1/2 teaspoon agave syrup
- Extra mint leaves and strawberries for garnish (optional)
Instructions:
- In a tall glass, muddle the mint leaves and strawberries until the mint is fragrant and the strawberries are broken into pieces. Stir in the light rum, club soda, juice of half a lime, and agave syrup. Add a few ice cubes to the glass. Garnish with extra mint leaves and a strawberry.
Makes 1 cocktail
