Low-Carb Substitute for Mashed Potatoes

This low-carb substitute for mashed potatoes made of a cauliflower and white bean mash will curb your cravings while keeping your waistline in tact.

Ingredients

  • 1 head of cauliflower, stem and leaves removed, quartered
  • 2 tablespoons olive oil
  • 2 garlic cloves, peeled and sliced
  • 1 (16 ounce) can white beans, drained and rinsed
  • 1/2 cup vegetable broth
  • Kosher salt
  • 3 tablespoons parsley, chopped

Instructions

  1. Place the cauliflower in a steam basket and place on top of a pot filled with 2 1/2-inches of water. Turn heat to medium high, cover and steam until fork tender, about 10 minutes. *To steam in the microwave: place cauliflower in a microwave safe bowl, add 1/4 cup water, and cook on high for 3-5 minutes.
  2. Heat the oil in a small frying pan over medium heat. Add the garlic and cook until fragrant, but not brown, 3-5 minutes. Remove the garlic.
  3. In a food processor, combine the cauliflower, white beans, garlic infused olive oil, and vegetable broth. Puree until smooth.
  4. Transfer to a serving bowl, season with salt, and stir in parsley.
