Goji Berry Salad Dressing

What is a goji berry? And how do you make goji berry salad dressing?

My friend, Christina, and I are frequent patrons of this spa cafe in town that focuses on cleansing and detoxifying food. On the menu, there is a salad with goji berry salad dressing. The salad comes in a huge bowl and the dressing is served in a glass bottle so you can pour as much dressing as you want over the salad. The dressing is so delicious that I had to recreate it.

Goji berries are bright orange-reddish berries native to China. They are often sold dried, like raisins. These berries are high in antioxidants and are thought to have anti-aging benefits, boost the immune system, protect vision, and prevent heart disease. Quite a lot from a little berry, don’t you think?

Goji berries are mildly tangy with a sweet and sour flavor. I mixed them with a little bit of lemon juice and honey for the dressing.
