I hope everyone had a fun and safe Halloween. My night was spent handing out candy to the cute little trick-or-treaters that came to my door. I’m pretty sure I had more fun than they did!
Anyways, back to the post…What’s a goji berry?
My friend, Christina, and I are frequent patrons of this spa cafe in town that focuses on cleansing and detoxifying food. On the menu, there is a salad with goji berry salad dressing. The salad comes in a HUGE bowl and the dressing is served in a glass bottle so you can pour as much dressing as you want over the salad. The dressing is so delicious that I had to recreate it.
Goji berries are bright orange-reddish berries native to China. They are often sold dried, like raisins. These berries are high in antioxidants and are thought to have anti-aging benefits, boost the immune system, protect vision, and prevent heart disease. Quite a lot from a little berry, don’t you think?
Goji berries are mildly tangy with a sweet and sour flavor. I mixed them with a little bit of lemon juice and honey for the dressing.
GOJI BERRY SALAD DRESSING
Ingredients
- 1/4 cup dried goji berries
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon honey
- 1/4 cup good quality extra virgin olive oil
- 1/2 teaspoon lemon zest
- Kosher salt and freshly ground pepper
- Fill a small saucepan with water and add goji berries. Heat over medium high heat until goji berries soften, about 3-5 minutes. Drain and reserve 2 tablespoons water. Place the berries and reserved water into a blender and blend until smooth.
- In a bowl, whisk together lemon juice, honey, and blended goji berries. Slowly whisk in the olive oil. Add the lemon zest and season with salt and pepper. Add a little water if necessary to thin out dressing.









The color is great! Unusual for a salad.
