It’s Labor Day weekend—the last weekend of summer. And what over-the-top indulgent treat are we making to celebrate? Homemade Ice Cream Sandwiches made with Caramel Chocolate Chip Cookie Bars. Tears of sadness or joy—I’m not sure (and not really this dramatic).

The end of summer is always bittersweet for me. It’s back to school time and the end of summer fridays, but it’s also my birthday.

My birthday was earlier in the week and I was so surprised to go to dinner at Eleven Madison Park. It is definitely a bucket list restaurant and an amazing food experience if you have the chance to go.

There were 14 courses total and all of them were incredible—here is one that I posted on Instagram. They also served a dish made out of sunflower hearts, sort of like artichoke hearts. I had no idea you could eat sunflowers (besides the seeds).

Dairy-free Chocolate Cupcakes with Frosting Two Ways

Why did my butter-loving self go dairy-free? Other people of course. It’s not like I would make an entire batch of chocolate cupcakes for myself or anything. 😊

But seriously, we had some friends visiting over the weekend and the vibe called for something sweet—and dairy-free. The cupcakes are made without eggs and butter, but are absolutely so delicious that I might consider always baking dairy-free. Do you see that moist crumb here???

Panzanella Bread Salad

It’s the weekend—almost. It’s Friday and that is enough for me to raise a glass. Is it going to be one of those jam-packed weekends with tons to do or a lazy one? I think my weekend is going to be a mix, which is good because I’ve had too many super busy weekends since we moved. Whatever kind of weekend it is, I highly recommend finding a bit of time to make Panzanella Bread Salad.

It is a carbo-lover’s dream. ♥ Lately, I have been all too into my carbs. Like this pizza that I made (as seen on Instagram) on Wednesday. Ohhh and this huge Italian dinner I went to at John’s of 12th Street—an NYC institution (so I’ve heard). They serve some seriously good meatballs.

I can’t seem to get enough Italian food I guess—and this panzanella salad is no exception. The basics: It’s a traditional Tuscan salad made with stale bread soaked in tomatoes, olive oil, and includes other summer ingredients.

Crispy Zucchini Fritters with Lemon and Basil

Summer is almost over and I’m not ready for pumpkin-spiced everrrythinggg. With the move back to NYC and getting organized, I didn’t have much time to enjoy lazy summer beach days or picnics in the park. But there are a few weeks left. And I think these Crispy Zucchini Fritters can make summer last a little bit longer.

So, about these CRISPY fritters. Don’t tell me I’m alone here, but does anyone else love the crispy edges of roasted potatoes or the buttery, crusty rim of a fresh pancake? yummm—you know what I’m talking about. These fritters have all the crispy edges and crusts you could possibly want.

I posted this on Instagram last week and have been surprised by its popularity. The color is entrancing and the taste is like pure summer. Can summer have a flavor? If so—this Watermelon Cooler is it.

Picking out a good watermelon is like hoping you get the gooey caramel-filled truffle in a box of chocolates. They all look the same. And sometimes you end up with the marzipan filling.

And that was the case with this watermelon. It wasn’t sweet and juicy, but a bit mealy. Turns out, that is the best kind of watermelon for juicing.
